Obviously one of the first recipes we tried to find was one for a chocolate cake. Some looked appealing but this recipe from http://www.greenkitchenstories.com/banana-almond-chocolate-cake/ looked too amazing to not make first. It is super chocolately and dense and we couldn't rave about it enough. The recipe doesn't call for it but we highly recommend indulging in this cake with some strawberries on the side ;)
Banana, Almond, Chocolate Cake
Ingredients
2 cups of almond flour
1/3 cup unsweetened cacao powder
1 teaspoon baking powder
Salt
2 eggs
2 bananas
1/3 cup olive oil
1/2 cup honey
Ganache ingredients
3 oz dark chocolate (darker the better)
1 singe shot of hot espresso or coffee
4 tablespoons of almond milk
2 cups of almond flour
1/3 cup unsweetened cacao powder
1 teaspoon baking powder
Salt

2 bananas
1/3 cup olive oil
1/2 cup honey
Ganache ingredients
3 oz dark chocolate (darker the better)

Cooking
Preheat the oven to 350°F. Combine the almond flour, cacao powder, baking powder and salt into a large mixing bowl. Take a medium size bowl, crack the eggs, and beat for about a minute. Mash the bananas with a fork and add to the eggs with the oil and honey. Beat until all is combined. Mix all ingredients until until everything is mixed. Grease a small-medium sized baking pain with oil and coat a little almond flour with cacao powder to the sides to prevent the cake from sticking to the pan. Pour the batter into the pan.
*Note the cake is delicious on its own so you can eat it without the ganache. Also if you are not going hardcore Paleo you could eat this with yogurt as well.

Chop the chocolate into small pieces and place in a bowl. Pour the coffee and heated almond milk over the chocolate and let sit to melt the chocolate. Stir with spoon until completely smooth. Pour ganache over cake and indulge!
