With no hummus on the Paleo diet, we have been craving almost anything to be able to dip all of our delicious vegetables in. This guacamole recipe is a very basic and standard way to make guac. Feel free to add your own flair by adding tomatoes, onions, mango, hot peppers, cilantro etc. to appeal to whatever your guac needs are.
Basic Guacamole
Ingredients
3 medium avocados
1 small shallot
1 lime
salt
pepper
Cooking
Mince the shallots and then in a small bowl combine the shallots, lime juice and 3 pinches of salt. Allow this to sit for about 10 minutes, while you pit and peel the avocados. Mash half the avocados in a medium bowl with a fork. Add the lime mixture and combine with the mashed avocados. With the remaining avocado, take them and cut into 3/4 inch pieces and add it to the mixture. Gently mash together and add pepper to taste. Take veggies/chips/spoon and eat away!
