LaraBars are apparently the big Paleo friendly snack bar on the market. But naturally they are silly expensive. So these Liar Bars are a money friendly snack bar to grab on the go... Perfect for those days when you'll leave the house in the morning and not return for 12 plus hours.
Liar Bars
Ingredients
1/2 cup unsweetened coconut flakes
3 tablespoons dry-roasted & salted macademia nuts
5 large Medjood dates

Preheat the Oven to 300°F. Place the coconut flakes on a layer of parchment paper on a baking sheet. Cook in the oven for 3-5 minutes or until they turn golden brown. Take out and set aside to cool. Take the macadamia nuts and pulse them in a food processor until they're finely chopped. Take the pulsed nuts and place them in a separate bowl. Take the Medjool dates, remove the pits, and chop into small places. Take the chopped dates and pulse them in the food processor until they form a sticky ball. Add the coconut flakes and then pulse the mixture until it sticks together. Make sure not to puree the coconut flakes. Transfer the mixture into the bowl with the macadamia nuts and combine the ingredients to become a ball of yumminess. Place the ball on a piece of parchment paper. Take another piece of parchment paper and flatten the ball into a square. Cut the square and you've got your very own homemade Liar Bars!
