The hardest parts of Paleo for us has been no cheese and no bread. It seems like raw cheese is okay in moderation but we're staying off of it for at least for the first 30 days. However, we have seen a million paleo bread recipes: most had terrible reviews. We knew we needed a bread recipe that wasn't stale or "healthy" tasting. Then we stumbled across this gem on Nom Nom Paleo App and we have been so pleasantly surprised. The bread is moist, delicious and filling. Enjoy!
Paleo Bread
Ingredients
2 1/2 cups of almond flour
1 1/2 teaspoons baking soda
1/3 teaspoon sea salt
3 tablespoons of ghee, as cold as possible
2 eggs
1 tablespoon lime juice
1 tablespoon apple cider vinegar
1 tablespoon honey
Cooking:
Preheat the oven to 350°F. Place almond flour, baking soda and sea salt in a large bowl. Disperse ghee throwout the bowl. Use your hands to work the butter into the dry ingredients and you should end up with a crumbly mixture. Take out an additional bowl and add eggs, lime juice, apple cider vinegar and honey. Whisk until mixed. Melt a tablespoon of ghee in an 8 inch cast iron skillet. While the skillet heats, pour the egg mixture into the dry crumbly mixture. Mix with a spatula until a sticky dough is formed. Use your hands to create a ball of dough that barely sticks together. Coat the melted butter on the skillet and place the dough ball on the skillet and gently press down until the dough is about 1 1/2 inches tall. Use a serrated knife to place a large "X" on top of the dough that is about a half inch deep. Transfer the skillet to the oven and bake for 20 minutes. The bread will be ready when a toothpick inserted into the center comes out clean. Remove the skillet from the oven and let the bread rest in the pan for 10 minutes before placing onto a wire rack to cool. Then enjoy!
