Friday nights can be the worst night of the week for cooking. Especially our first Friday of our 30 Day Paleo--so unmotivated to cook and never more inclined to pick up that phone and have it delivered to our front door. However we decided to pick a super easy and delicious recipe to hold us over on our Friday night laziness. We had the Porkwurst from our order from Door to Door Organics so we decided to do Porkwurst, peppers and onions. Couldn't be an easier and more satisfying/filling recipe.
Porkwurst, Peppers and Onions
Ingredients:
(1) green pepper
(1/2) white onion
Organic porkwurst/sausage of your liking (Trader Joe's has a great selection of organic sausages)
Cooking:
Warm a cast iron skillet on medium heat. Once warm, place porkwurst/sausage in the skillet. Dice green peppers and white onions to about 1/2 inch. Add to the skillet and add salt and pepper to your liking. Cook for a half hour and it is ready to be served. Note: We happen to like our peppers with a little bit of crunch, if your preference is a softer pepper, place peppers on skillet at the same time as the porkwurst/sausage and then add onions in about 10 minutes later.
